What is it?
Sirloin from Iga beef raised for 32 months at Aoyagi Farm in Iga, Mie Prefecture. Graded A5 with a marbling score of BMS 10, hand-cut into two 200g steaks 2cm thick and shipped frozen. Iga beef is Japanese Black cattle finished for at least twelve months in the Iga area, and almost all of it is maiden heifer.
What does it taste like?
- The fat melts at around 25°C, so the surface turns glossy just sitting on the counter
- Cooked, the fat reads sweet and the lean carries a deep savoury weight
- 200g is the size two people actually finish when the beef is this rich
- BMS 10 marbling is fine-grained, which makes the finish lighter than coarsely marbled beef

How do you drink it?

Thaw in the fridge for 12–18 hours; in a hurry, 90 minutes in iced water still in its bag. Never in a microwave

Take it out 30 minutes before cooking and pat the surface dry

Sear 90 seconds a side in a hot dry pan: no oil, and stand the fat cap down first

Rest under foil for five minutes, then cut

Salt just before searing. In Iga they eat it with a little wasabi and soy sauce
