What is it?

A5 chuck roll from Aoyagi Farm in Iga, Mie, sliced to 1.8mm: thick enough for sukiyaki, thin enough for shabu-shabu. 500g serves three to four, shipped chilled. BMS 9, and the fat-to-lean ratio of this cut is what makes it a hot-pot cut.

What does it taste like?

  • The fat is sweet enough that sugar and soy sauce alone season it; no stock needed
  • For shabu-shabu, three seconds a side in the water is plenty
  • Roughly 6:4 lean to fat, which keeps the later rounds from feeling heavy
  • 500g feeds three to four adults, or a family of four with children

How do you drink it?

    Take it out of the fridge 20 minutes before you cook, still chilled but not cold

  • 02

    Sukiyaki: melt beef fat in the pan, lay slices flat, shake over a tablespoon of sugar and two of soy sauce, turn after ten seconds

  • 03

    Shabu-shabu: hold kombu broth at 80–85°C, never boiling, three seconds a side

  • 04

    Add vegetables after the beef, so they cook in the fat that has rendered out

  • 05

    Leftovers: shred and simmer with egg the next day rather than reheating slices whole

Anywhere in Japan. Shipping is ¥1,320 (refrigerated delivery) and takes 3–5 business days after dispatch.

Does it need refrigeration?
It travels refrigerated the whole way. Redelivery keeps the cold chain, but please pick a date you can be in for. Chilled and frozen items cannot be sent to a hotel.
How long does it keep?
Four days from dispatch at 4°C or below, and it is best on the day it arrives or the day after. If you cannot eat it in time, divide it into portions and freeze for up to a month.
Can you send it frozen instead?
Yes: write frozen in the order notes. Frozen extends the window to sixty days, at the cost of a little moisture loss on thawing. If you already know the date you will eat it, choose chilled.
Can you gift wrap it?
Yes. The noshi inscription is picked from a list: seasonal gifts, celebrations, thanks, with the giver's name added free. The chilled outer carton is unbranded, and there's no invoice in the box.
